Thai Carrot Salad

This beautiful salad is not only pretty but good for you too. A Taste of Thai Garlic Chili Pepper Sauce gives it some heat to balance the sweet carrots.


  • 2 tablespoons Garlic Chili Pepper Sauce
  • 2 tablespoons dark brown sugar
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon Fish Sauce
  • 2-10 oz packages matchstick carrots
  • 1/2 cup roasted peanuts, coarsely chopped
  • 1/4 cup chopped cilantro leaves


  1. Add Garlic Chili Pepper Sauce, sugar, oil, lime juice and Fish Sauce to a large bowl. Whisk until sugar dissolves.
  2. Add carrots, peanuts and cilantro. Toss to combine and serve.
