A Taste of Thai Red Curry Paste adds extra spice to these delicious corn fritters, while A Taste of Thai Sweet Chili Sauce makes the perfect dipping sauce.
Ingredients
- 2 teaspoons Red Curry Paste
- 1 large egg
- 1-15 oz can corn, drained
- 3 scallions, finely chopped
- 1/4 cup all-purpose flour
- 2 teaspoons soy sauce
- 2-4 tablespoons vegetable oil
- 1-7 oz bottle Sweet Chili Sauce
Directions
- In a large glass mixing bowl, warm Red Curry Paste in microwave on high power for 5-10 seconds, to soften it.
- Add egg and whisk together until curry paste is smooth.
- Add corn, scallions, flour and soy sauce. Mix until just blended.
- Heat oil in skillet over medium-high heat. Using two spoons, drop small mounds (about 3 tablespoons) of batter into hot skillet. Use back of spoon to flatten fritters. Don't overcrowd.
- Fry until lightly browned on both sides and drain on paper towels. Repeat with remaining batter.
- Serve with A Taste of Thai Sweet Chili Sauce for dipping.
