Coconut Milk combined with A Taste of Thai Peanut Sauce Mix and Garlic Chili Pepper Sauce, makes a delicious dressing for this refreshing salad.

Ingredients

  • Dressing:
  • 1/2 cup Coconut Milk
  • 3 tablespoons Peanut Sauce Mix
  • 3 tablespoons lime juice
  • 2 tablespoons Garlic Chili Pepper Sauce
  • Salad:
  • 1 English cucumber, halved and sliced thinly
  • 1 cup diced pineapple
  • 1 cup whole roasted cashews
  • 1 carrot, thinly sliced
  • 1 small red bell pepper, chopped
  • 1 bunch scallions, chopped
  • 1/2 cup chopped basil

Directions

  1. Whisk Coconut Milk, Peanut Sauce Mix, lime juice and Garlic Chili Pepper Sauce in a medium bowl. Set aside.
  2. Add cucumber, pineapple, cashews, carrot, bell pepper, scallions and basil to a salad bowl. Toss with dressing and serve.
