Coconut Milk combined with A Taste of Thai Peanut Sauce Mix and Garlic Chili Pepper Sauce, makes a delicious dressing for this refreshing salad.
Ingredients
- Dressing:
- 1/2 cup Coconut Milk
- 3 tablespoons Peanut Sauce Mix
- 3 tablespoons lime juice
- 2 tablespoons Garlic Chili Pepper Sauce
- Salad:
- 1 English cucumber, halved and sliced thinly
- 1 cup diced pineapple
- 1 cup whole roasted cashews
- 1 carrot, thinly sliced
- 1 small red bell pepper, chopped
- 1 bunch scallions, chopped
- 1/2 cup chopped basil
Directions
- Whisk Coconut Milk, Peanut Sauce Mix, lime juice and Garlic Chili Pepper Sauce in a medium bowl. Set aside.
- Add cucumber, pineapple, cashews, carrot, bell pepper, scallions and basil to a salad bowl. Toss with dressing and serve.
