Tropical Coconut Smoothie

We prefer the Lite Coconut Milk in this refreshing smoothie. It’s 60% less fat and does not cover up the subtle flavors of banana and pineapple.  It would make tasty shooters for a summer’s brunch, with a touch of rum.

Ingredients

  • 1-13.5 oz can Coconut Milk, regular* or lite
  • 1 large ripe banana, chilled
  • 1-8 oz can crushed pineapple in its own juice
  • 1/2 cup confectioner's sugar
  • 1 cup ice cubes
  • 2-3 drops coconut extract
  • * If using regular Coconut Milk, add 2 or 3 more ice cubes.

Directions

  1. Add Coconut Milk, banana (sliced), pineapple, sugar, ice cubes and extract to a blender. Blend on high speed until very smooth. Serve.
